Italiano Cream of Tartar Ideally used as stabilizing & thickening agent in egg whites and whipped cream and maintaining their texture & volume. Also used as an anti-caking agent. When mixed with liquid (lemon juice, vinegar or water) can be used to make a paste-like cleaning agent for stains & metals (brass, aluminum & copper).
